How to prepare for a NYC health inspection: a 15-minute walkthrough
You cannot predict the day, but you can be ready for any of them. Here is the walk to run before service.
NYC inspections are unannounced, so readiness has to be a habit, not a scramble. This walk takes about 15 minutes and catches most of what gets written up.
Temperatures, every unit
Thermometer in hand, check every reach-in, hot well, and the walk-in. Cold at or below 41°F, hot at or above 140°F. Write it down.
Dates on everything
Open the prep fridges. Every container of prepared food should carry a date. Toss what is past, label what is not.
Pest check and the report
Look in the corners, under equipment, and along the walls for droppings or activity. Have the most recent pest-control report in your folder.
Sinks, cloths, and surfaces
Hand sinks stocked and clear. Sanitizer buckets fresh and at strength, cloths in them. Slicers and can openers clean. Floors clear so the inspector can see.
The folder
Have one folder ready to hand over: latest pest report, Food Protection Certificate, temperature logs, and any cleaning records. Being able to produce documents on request changes the tone of the whole inspection.
The point of the walk
