The most common NYC restaurant health violations (and how to fix each)
A handful of violations show up on inspection after inspection. Knowing them cold is the cheapest way to protect your grade.
Most lost points come from a short list of repeat offenders. Fix these and you have handled the majority of what an inspector will write up.
1. Cold and hot holding temperatures
Cold food must stay at or below 41°F and hot food at or above 140°F. A reach-in drifting warm or a steam table running cool is the single most common critical violation. Fix: check every unit with a calibrated thermometer at open and mid-shift, and log it.
2. Food not date-marked
Prepared food held more than 24 hours needs a date. Inspectors look for it on every container. Fix: a labeling routine at prep, every day, no exceptions.
3. Evidence of pests
Mouse droppings, live roaches, or flies near food are high-point critical violations and a fast path to a grade drop. Fix: a licensed pest contractor on a regular schedule, the report kept on site, and entry points sealed.
4. Wiping cloths stored improperly
Cloths left on counters instead of in sanitizer buckets get cited constantly. Fix: fresh sanitizer buckets at the right concentration, cloths in them between uses.
5. Hand-washing and bare-hand contact
Blocked or unstocked hand sinks, or staff handling ready-to-eat food bare-handed, are reliable point earners. Fix: every hand sink stocked and clear, gloves or utensils for ready-to-eat food.
6. Food contact surfaces not clean
Slicers, can openers, and prep surfaces get flagged when buildup is visible. Fix: a written cleaning schedule for equipment, not just floors.

Every one of these is a routine that slips under pressure, not a one-time fix. The restaurants that hold an A are the ones that made each a daily habit and kept the paper trail. Knowing which of these the city has already cited you for is half the battle.
